Step 1
Thinly slice 3-4 ripe tomatoes into rounds and layer on a plate or in a shallow bowl.
Step 2
Add a minced garlic clove or two if you want a punch of flavour. Drizzle over the vinegar, the olive oil and sprinkle with salt and lots of cracked pepper.
Step 3
Set aside at room temperature for at least 15 minutes.
Step 4
Top the salad with one of the additional add ons – fresh basil leaves. sliced olives or crispy capers, or thin slices of bocconcini.
