Step 1
Preheat the Oven: Preheat your oven to 180°C and line a loaf pan with baking paper.
Step 2
Mash the Bananas: In a bowl, finely mash the ripe bananas using a fork.
Step 3
Mix the Wet Ingredients: Add the softened butter, brown sugar, vanilla, and eggs, whisking until well combined.
Step 4
Add the Dry Ingredients: Stir in the chocolate chips, sifted flour, spices, bi-carb soda, and salt, mixing until fully incorporated.
Step 5
Pour into Loaf Pan: Scoop mixture into the prepared pan. Sprinkle the top with extra chocolate chips if you desire.
Step 6
Bake the Bread: Bake for an initial 20 minutes before rotating. Continue baking for another 20 minutes or until a skewer inserted into the center comes out clean. (If the top starts to brown too quickly, cover it loosely with aluminum foil.)
Step 7
Cool and Serve: Allow to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
