Step 1
Heat oil in a large saucepan over medium heat. Add onion, carrot and celery. Cook, stirring, for 5 minutes or until onion has softened add garlic and heaped spoon of tomato concentrate then add bay leaves & basil.
Step 2
Add mince. Cook, stirring with a wooden spoon to break up mince, for 10 minutes or until browned.
Step 3
Add Passata and some water to the sauce. Add milk.
Step 4
Bring to the boil. Reduce heat to low. Simmer, covered, for 30-45 minutes.
Step 5
Remove cover. Simmer for 10 to 15 minutes or until water evaporates slightly this will make the sauce thicker.
