Mango, Halloumi & Tajin Salad
A refreshing and delicious summer salad that is packed with flavour. A great salad to bring when you have to ‘bring a plate’.

Step 1
Dice the ripe mangoes and avocados.
Step 2
Finely dice the red capsicum and 1/4 red onion.
Step 3
Deseed and dice the cucumber or use 1 Lebanese cucumber.
Step 4
Finely dice the bunch of coriander.
Step 5
Cut the block of halloumi in half lengthways. Then into 1 cm strips. Pan fry on medium heat with a drizzle of honey. It should take approx 1-2 mins on each side, pan fry until golden brown.
Step 6
Pickle the red onion with apple cider vinegar, caster sugar, hot water, and salt and pepper. You can do a quick pickle for 30 mins or leave overnight if making it the day before.
Step 7
Mix lime juice, sugar, olive oil, tajin, salt and pepper for the dressing.
Step 8
Combine all ingredients in a bowl, top with extra tajin to taste and serve.
