Step 1
Prepare all ingredients – shallots, fresh chilli, ginger, coriander, and Thai basil.
Step 2
Prepare your mussels by washing and de-bearding as necessary.
Step 3
Add all prepared ingredients into a pan and fry until fragrant (about 5 minutes).
Step 4
Add 1 can of coconut milk, 2 tbsp green curry paste, 2 tbsp fish sauce, and the juice of 1 lime.
Step 5
Add in mussels and simmer covered for about 5 minutes (until they open).
Step 6
Plate up and enjoy arguably the best flavour of mussels with your favourite toasted bread.
