Delicious quick and easy salad using seasonal pears, cucumbers, and spinach. A quick one to make as a side salad or a great base to add proteins like tofu or chicken.

Step 1
In a small bowl, whisk together the white miso paste, mirin, white wine vinegar, and cold water until smooth.
Step 2
Slice the pear into thin slices, make cucumber ribbons using a peeler, and roughly chop spinach leaves.
Step 3
In a large salad bowl, combine the sliced pear, cucumber ribbons, and spinach.
Step 4
Pour the miso dressing over the salad and toss gently to combine.
Step 5
Top the salad with fried shallots, spring onion, and chilli flakes.
