Step 1
Preheat oven to 190°C fan forced. In a baking tray add chopped fennel, whole garlic cloves, tomatoes, capers, and thyme leaves. Drizzle with olive oil and season with salt and pepper.
Step 2
Bake for 50-60 minutes until fennel is tender and slightly golden on the outside.
Step 3
Serve alongside your protein of choice. This is delicious served with baked white fish.
