Step 1
Coarsely grate cauliflower with a box grater and place in a large mixing bowl. Add lemon zest, ground cumin, sumac, chilli flakes and salt and gently mix.
Step 2
Drizzle with olive oil and squeeze over the lemon juice and mix again. Add chopped herbs and currants and toasted nuts, if using. I recommend using at least one optional add in.
Step 3
Transfer to a serving bowl.
