Step 1
Preheat the oven to 200C or turn on the grill setting. Lay the bacon on a tray and cook for 10 minutes or until cooked through and a little crispy.
Step 2
Crack eggs into a bowl and add in the egg whites, whisking well with a fork.
Step 3
Heat a frypan on medium low heat. Pour the egg mix in, stirring gently to scramble, until eggs are soft but set.
Step 4
Lay a tortilla down on the bench top and start building the burrito. Stack the sauce, cheese, bacon, beans and finish up with the scrambled on top.
Step 5
Place your filled tortilla flat on the hot pan and cook for a few minutes, or until hot and crispy. Don’t leave it too long as it might break when rolling up.
Step 6
We’re almost there! Take your burrito off the pan, grab both ends a fold sides inward. Tuck and roll tightly from the bottom. Ensure edges are closed. Enjoy!
