Step 1
To make a dressing for the salad, combine the sherry vinegar, lemon zest, sumac and olive oil in a screw-top jar. Season with salt and pepper, then put on the lid and shake well to mix.
Step 2
Arrange the tomatoes and figs on a serving plate, seasoning them lightly with salt and pepper. Scatter over the tarragon and place dollops of labneh around the plate.
Step 3
Finish the salad by drizzling the dressing evenly over the tomatoes, figs and labneh.
