Easy Lentil Salad
You can make this simple salad with cooked dried green lentils or a can of well-drained and rinsed brown lentils. Use this recipe as a guide only, switching out whatever ingredients you have on hand. You want lots of fresh herbs, something salty like capers, pickles, or olives. Double or triple it to feed a crowd.
Serve on bread with dip, or as a quick side to a grilled piece of meat, fish or roast veggies.

Step 1
Drain and rinse the lentils and set aside.
Step 2
In to bottom of a large bowl mix make the dressing by combing the olive oil, salt, pepper, sugar, nutmeg, lemon zest and lemon juice and garlic. Mix well with a fork.
Step 3
Add the lentils into the bowl with the dressing and gently mix to combine. Add the chopped green olives, currants and chopped parsley leaves and mix again.
Step 4
Taste adding more salt or pepper if needed and serve.
