Step 1
Begin by roughly chopping the parsley and discarding the stems, place in a medium sized mixing bowl.
Step 2
Slice the spanish onion into fine wedges and the cherry tomatoes into quarters and add to the mixing bowl.
Step 3
For the dressing, crush the garlic with the salt and combine in a mixing bowl with the extra virgin olive oil and lemon juice giving, mix well.
Step 4
Add the sumac and the dressing to the mixing bowl and toss gently. Serve immediately.
