One Pot Creamy Tuscan Style Salmon 🐟
This creamy Tuscan-style salmon dish is perfect for a cozy Saturday night in. It features crispy-skinned salmon with a rich and flavorful sauce made from coconut milk, sundried tomatoes, capers, and onions.

Step 1
Start by crisping off your salmon skin and browning the other side. Cook in a hot nonstick pan for about 5 mins on the skin side and 2 mins on the top side. Remove and set aside.
Step 2
Add onion, sundried tomatoes, and capers to pan. Cook for 5 mins.
Step 3
Add coconut milk (or cream) and paprika. Mix thoroughly. Add 1 tbsp of cream cheese if using instead of cream.
Step 4
Add broccolini and simmer on low heat for 10 minutes.
Step 5
Add salmon back in, baste and top with lemon zest.
