Simple Apple Cinnamon Cake
A simple apple cake is a staple in the Clove kitchen. Need something for afternoon tea? A treat for a friend who needs cheering up? A sweet thing for a picnic? This cake is it.
Simple ingredients, pantry staples, no oil, no fancy equipment, and it stays perfectly moist. Enjoy as is with a cup of tea.

Step 1
Preheat the oven to 170°C. Place one of the racks in the middle of the oven ready for baking. This will stop the top of the cake from burning. Lightly grease a 20cm cake tin.
Step 2
In a small saucepan melt the butter over low heat and set aside to cool.
Step 3
In a medium sized bowl, mix together the flour, baking powder, cinnamon and salt.

Peel and core the apples, and cut into 3cm pieces.
Step 5
Crack theeggs into a large mixing bowl and whisk in the white sugar and brown sugar until thickened. Whisk in the vanilla and melted butter.
Step 6
Fold in the flour until just combined, being mindful not to over mix. This will help keep the cake fluffy and moist. Gently mix the apple pieces through the cake. It will feel like you have too many apples, but don’t panic, it’s the right amount.
Step 7
Pour batter into greased cake tin, smoothing down the surface with a spatula. For the topping, mix the brown sugar, cinnamon and salt in a small bowl. Sprinkle over the top of the cake, then place in the oven on the middle tray and bake for 40 minutes until golden on top and cooked through.
Step 8
Remove from the oven and allow to cool for 15 minutes before removing from cake tin.
Step 9
Slice and serve with a cup of tea.
