Lebanese Vermicelli Rice

This rice with vermicelli noodles is quite traditional and unique to Lebanese cooking in that it pairs with our weeknight stews and traybakes. The hints of ghee would make it a great rice to accompany your favourite curry too.

Step 1
Begin by washing the rice really well until the water runs clear, strain the water and set aside.

Step 2
In a medium sized pot heat the ghee and crush the vermicelli noodle nests with your hands and cook until they turn a golden colour, add the rice, 3 cups of water and salt. Cover with the lid.

Step 3
Bring the pot to a boil before simmering on low heat and cooking for approximately 25 minutes or until the water has evaporated and the rice is cooked through.

Step 4
Serve alongside your favourite Lebanese traybake or stew.
