Baked Salmon with Garlic, Thyme & Zucchini Salad

Step 1
Preheat the oven to 160°C. Meanwhile use a peeler to make zucchini ribbons. Transfer to a bowl, season with salt, gently toss, and rest for 15 minutes.
To Cook Salmon

Mince garlic, pick and chop thyme, zest lemon and chop parsley, set all ingredients aside, ready to use on the next step.

Place salmon on a baking tray, rub the salmon with garlic, thyme, lemon zest, salt and pepper.
Step 4
Place butter on top of each piece of the salmon, then bake for 12-15 minutes or until cooked through. Rest for 5 minutes before serving.
To Finish The Salad

Drain the excess water from zucchini, add lemon juice, olive oil, and pepper, gently mix.

Transfer to a wide platter and garnish with pine nuts, and mint. Serve with salmon
