Quick Carrot & Ginger Salad

If you want to get veggies on the table quick sticks, make this simple grated salad. It’s big on flavor and only takes 10 minutes. Fresh ginger and lots of lime make this salad the perfect side to curries, grilled fish, fried eggs, or on top of rice bowls.

Step 1
In a small pan over low to medium heat, gently toast the sesame seeds for 3-5 minutes or until golden. Turn off the heat and allow to cool.

Step 2
Peel the carrots and grate them on the coarse side of a box grater, directly into a large bowl. Grate the ginger on the fine side of the box grater and mix through the carrots.

Step 3
Squeeze lime juice over the carrots, then add the toasted sesame seeds, sesame oil, a generous pinch of Salt and pepper. Pick coriander leaves from the stem and add to the bowl, and gently mix everything together. Taste, and add more salt and pepper if needed.

Step 4
Transfer to a platter and serve.
