Salmon Soba Noodle Salad
One of my favourite midweek dinners, this salmon soba noodle salad is so simple, fresh, and tasty! If you’re sick of boring salads, this one is sure to leave you satisfied, nourished, and wanting more.

Step 1
Add sliced cabbage, carrot, cucumber, and radish to a large salad bowl.
Step 2
Add snow peas to a pot of boiling water. Boil for 60-90 seconds until tender. Drain and refresh in iced water to cool. Thinly slice lengthwise and add to salad.
Step 3
Cook soba noodles in a pot of boiling water for 4 minutes until tender. Drain and rinse under cold water to cool. Add to salad.
Step 4
To make the dressing, mix together lime juice, sesame oil, soy sauce, rice wine vinegar, and maple syrup. Pour over salad and toss to combine. Top with sliced avocado and sesame seeds.
Step 5
Heat a non-stick frying pan over medium-high heat. Add a little olive oil and add salmon fillets skin side down. Fry for 3 minutes until crisp. Turn fillets and reduce heat to medium. Continue to cook for another 3-5 minutes until done to your liking. Set aside and serve your soba noodle salad topped with a salmon fillet.
