Ingredients: Hot peppers 42%, vinegar, water, brown sugar, salt, modified corn starch, xanthan gum, ascorbic acid (antioxidant), garlic powder, onion powder, potassium sorbate (preservative) | Creamed coconut or coconut cream is highly concentrated coconut in a firm block. Coconut cream makes the perfect storecupboard ingredient - just cut off a small piece, and dilute in water to make just the amount of coconut milk you need. Then put back in the cupboard for next time. To make coconut milk for cooking, dissolve 50g creamed coconut in 150ml of water. This pack will make 800g of coconut milk. Ingredients:Coconut, preservative (sulphur dioxide) | Harina PAN – white is the essential ingredient in authentic Venezuelan arepas. Accept no substitutes! The Harina PAN brand is the most famous brand of maize flour in Venezuela. An arepa is a grilled cornflour or cornbread ‘bun’, and they’re popularly served as breakfast and street food. Once cooked, they’re split in half to hold fillings. Classic fillings include Reina Pepiada - chicken with avocado, mayonnaise & red onion, shredded beef, cheese, or even just a bit of butter! You can also use Harina Pan to make Venezuelan empanadas – small, half-moon shaped cornbreads, classically stuffed with shredded spiced beef. Ingredients: 100% pre-cooked white maize meal. | Jamaican all-purpose seasoning is a classic Caribbean spice blend — a seasoning bright with fiery chilli peppers, complex all-spice and thyme. Rub into chicken pieces for jerk flavours, or use in the traditional 'brown stew chicken', whose bland name disguises its rich spiced flavours and heritage. Ingredients: Maize, seasonings (black pepper, onion, garlic, chillies, escallion, scotch bonnet, pepper, coriander, pimento, thyme), less than 5% sea salt, natural flavours. | Mention cornmeal in Jamaica and someone will reply with ‘dumpling’. The Jamaican cornmeal dumpling isn’t the fluffy white dumpling served in British stews, nor the Eastern European filled dumpling, instead the rich yellow cornmeal polenta — coarse or fine depending on taste — is mixed into a dough with flour and water, and then cooked. Either deep fry, to make the golden dumpling served with Jamaica’s national dish ackee and salt fish, or add to a clear soup and simmer until cooked. Fine polenta is used around the world, and Dunn’s River include two recipes on the back of the pack for classic American chilli corn bread, and cooked polenta with parmesan and butter. Ingredients: Maize. May contain traces of gluten. | Sweetened condensed milk is a firm favourite in desserts across Asia, Latin America, and the Caribbean. Simmer for your own rich golden dulce de leche caramel, use to make fudge, or stir together with Guinness for a Jamaican Guinness punch!
