Lemongrass is a lemony, floral grass most commonly used in Thai cuisine. Use this sliced lemongrass in Thai green curries, Asian salads and to flavour oil at the beginning of a stir-fry. Sliced lemongrass can also be added to lemonade or simply used to flavour chilled water in place of a wedge of lemon or lime.
As this sliced lemongrass is soaked in water it is more succulent than fresh lemongrass which can often become over-dry – sprinkle it as a garnish over rice dishes or add to a Thai salad with prawns, Thai fish sauce, chilli, a squeeze of lime, sesame oil and plenty of coriander.
