Dakos – mini crisprolls from Crete – are delicious served with a tapenade, or stirred through a rich tomato salad. Top with ripe chopped tomatoes, olive oil, crumbled feta and black olives for a seriously addictive snack. Or use dakos in place of stale bread in an Italian panzanella. Try zaatar the traditional way by mixing with olive oil to form a runny paste - then brush onto flatbread, heat and roll it up to eat. Flatbreads of this type are called manoushi, and are a popular snack and breakfast food in Lebanon and Syria. Also try using zaatar in marinades and dry rubs for lamb, chicken and fish.

In Egypt, it’s commonly served in a dish for people to dip olive oil-soaked bread into as a starter. Dukkah is a traditional Egyptian spice blend of roasted nuts and mixed spices. Almonds, hazelnuts, coriander and cumin are found in nearly every dukkah blend, but each family will have their own secret recipe. This recipe is inspired by a blend that the Olives et Al founders tasted while on a trip to Egypt. A sprinkle of Egyptian dukkah puts a new twist on hummus and plain yoghurt dips.
