Naga Bhut Jolokia held the title as the hottest pepper in the world – despite being recently knocked off the podium, it is a dangerously hot ingredient.
It is used as tear gas in India, and ranks over one million units on the Scoville Scale of chilli heat – ten times hotter than scotch bonnets.The chillies are mainly grown in Bangladesh and north eastern Indian states.
They should be handled with great care and used in moderation. Add the smallest dash to curries, use in fiery, homemade garam masalas and hot tomato salsas.
