Korean Soy Sauce For Soup
Also known as guk gang jang, Korean soy sauce differs from the Japanese-style soy sauce also used in Korea in both flavour and colour. Its light brown colour is often preferred as it doesn’t discolour clear soups as much as other varieties. Its flavour, meanwhile, is less sweet and more salty than regular soy sauce. Korean soy sauce for soup is a by-product from making doenjang, Korean soy bean paste.
Use Korean soy sauce in tkeok-guk soup with tteok rice cakes, thinly sliced beef, shiitake mushrooms, Korean red pepper powder, minced garlic and sesame oil. Korean soy sauce for soup is also used to make Korean namul, vegetable side dishes, and muchim, Korean salads.

Doenjang soybean paste is made from fermented soybeans and is similar to Japanese miso – though doenjang has a coarser consistency and stronger taste, which works well in thick soups and stews like Korean jjigae. Doenjang soybean paste is commonly used together with gochujang - a red chilli soybean paste. Together they bring a kimchi-like hot, warm spice to Korean dishes. Serve doenjang soybean paste as a condiment with bi bim bap, or even just with a bowl of plain rice. Dolsot bibimbap is a Korean rice dish, served in a searingly hot stone bowl – the ‘dolsot’. The dolsot bowl should be slowly brought up to heat in an oven, while the sticky, sushi rice is cooking on the hob. To make bibimbap, sesame oil is heated inside the dolsot bowl, and then the cooked rice is heaped in – so that it starts frying in the sesame oil. Traditional bibimbap is then topped with vegetables, a raw egg yolk and gochujang chilli paste. It’s stirred through at the table – so the egg yolk and rice cook in the heat from the stone dish, and the vegetables stay piping hot.

It contains an authentic Korean dolsot stone bowl, sesame oil, gochujang paste and delicious sushi rice. All you need is a few vegetables to stir fry, and an egg to crack on the top – a great store cupboard supper!

|Korean thin wheat noodles are thin round wheat noodles with a soft, elastic texture once cooked. They are the Korean version of Japanese somen noodles and feature in a number of warm noodle broth dishes. Try making the ultimate comfort food with these noodles- Janchi Gooksu or chicken noodle soup. Another dish, Janchi Guksu, literally translates as party noodle as the soup if often served at celebrations. Noodles symbolise longevity in life and marriage so they are particularly common at weddings and birthday parties. Boil So Myun noodles for around 3-4 minutes. Rinse in cold water to wash off the excess starch and drain. Serve with a flavoursome broth and toppings such as sliced beef, seasoned cucumber, Korean red pepper paste and hard-boiled egg. This pungent condiment uses anchovy extract, and is naturally fermented to retain the full flavours and minerals. Korean anchovy sauce can also be used as a soy or salt substitute in marinades, dressings or broths. Also try churning the Korean anchovy sauce with butter, and freezing it to create 'umami' butter rounds to top grilled fish. Ingredients: water, anchovy extract(stolephorus commersoni), salt, monosodium glutamate (E621). Contains allergens: fish.||Gochujang red pepper paste is a traditional Korean condiment used to bring rich spiciness to soups and jjigae stews, or add a bit of excitement to a bowl of plain rice. The deep red gochujang paste has kimchi-like taste and complex chilli flavours. It's perfect for enhancing traditional Korean dishes and stir fries, but gochujang is also exciting when used in unexpected recipes – such as bacon butties, beef jerky and chilli kale chips! Try mixing the gochujang with doenjang (fermented soybean paste), minced spring onions, garlic, ginger, rice wine and sesame oil to make ssamjang - the dipping sauce for Korean lettuce wraps. Also use gochujang in a marinade for bulgogi beef, and as a dressing for the Korean raw fish and vegetable dish, hweh bop bop.
