Knife-cut noodles, also known as dao xiao mian, are chewy wheat noodles for soups and stir fries. They’re also popularly eaten in China with minced meat sauces, with plenty of red chilli and spring onions.
Cook the noodles in boiling water for 7 minutes, then drain. At this stage you can either add to a wok with stir-fried meat and vegetables, add straight into hot soup, or top with your choice of sauce.
