Green Tea Noodle
Description
Green tea noodles are a new soba noodle experience. The addition of green tea powder to these buckwheat noodles gives a slightly sweeter, yet earthier flavour.
The noodles are at their best served like traditional soba – cold, with a chilled dipping sauce of dashi, soy sauce, mirin, rice vinegar and sugar. This is often eaten as a refreshing meal on hot days in Japan. Sliced spring onions and even wasabi paste make good accompaniments to the chilled noodles for customising your dipping sauce.
You can also serve the green tea noodles in a hot soup. Add the cooked noodles to a simple soup base – dilute the dipping sauce for cold noodles and heat through for the most authentic flavour. Garnish with sliced spring onions and nori flakes for an easy and comforting meal.
