Description
These edible mallow flowers are strongly-scented, mauve flowers. Mallows are closely related to the hibiscus. They have a similar savoury-sweet taste with vegetal courgette and clover notes – though mallow flowers are considerably smaller than the hibiscus, with paper-thin petals.
The beautiful, mauve mallow petals also give off colour and aromas when infused in liquids. Try adding a pinch of mallow to sugar syrups, and mix with gin to make a mallow gin sling or a ‘mallowtini’ – as well as traditional mallow flavoured marshmallows. Also, mix the mallow petals with a little hot water, and then add icing sugar for a naturally-coloured, and delicately-flavoured frosting.

This orange blossom water is made by boiling orange blossom flowers in water, and then capturing and condensing the steam. The orange blossom water is great in syrups, used in basboosa, sponges and baklavas. It can be used to flavour delicate patisseries such as orange blossom and strawberry marshmallow.
