Dios Baco sherry vinegar with Pedro Ximenez is a sharp sherry vinegar that is balanced with the addition of Pedro Ximenez – an intensely dark and sweet Spanish sherry. The Dios Baco sherry vinegar is aged for around 12 years with the Pedro Ximenez adding richness to the vinegar during this process. Use the Dios Baco sherry vinegar with Pedro Ximenez in a similar way to balsamic vinegar – in salad dressings, as a glaze or over figs and cured ham.
