Chinese Wind-Dried Pork Sausage
Chinese wind-dried pork sausage – lap cheong or lạp xưởng – is a semi-dried pork sausage, seasoned with a sweet-salty and light rosewater liquor. The Chinese wind-dried sausage is highly seasoned so is used to balance flavours of other ingredients. A little goes a very long way – perhaps adding just one or two sausages to a dish for four people. Each packet contains 4 sausages.
Fry small pieces of the sausage in oil and stir through soaked glutinous rice before it is steamed, or season a dish of greens or vegetables.
Once opened keep refrigerated and consume within a few days. Made in the Netherlands.
