Chinese Five Spice Pouch
Description
Chinese five spice blends are based on the ancient philosophy of representing both yin and yang in food, incorporating all five elements of Chinese cooking: bitter, sweet, pungent, salty and sour into a single spice mix.
Use Chinese five spice as a meat rub or a marinade for rich meats such as duck, beef and pork which can carry the big flavours. Also use a pinch of the five spice blend to season stews and vegetable dishes. With cinnamon and ginger flavours, the spice is a particularly good ingredient for sweet cooking, with the flavours lending themselves well to chocolate tortes, almond biscuits and nut brittle.

This Pixian Chilli Bean Paste is from Pixian in China's Sichuan province, famed for its chilli bean pastes. Sichuan chilli bean paste is a regional ingredient, used in Western China’s traditionally tongue-tinglingly, spicy dishes such as mapo dofu or fish fragrant aubergines. This delicious chilli paste makes a great condiment alone with plain rice, is lovely when stirred into noodle broths, and can be used to spice up and enrich a variety of different sauces. This douban jiang or chilli bean paste is a rich brown colour with a relatively smooth, blended texture.
