Amodeo Carlo’s Millefiori Honey in 1 kg jar is produced in the Palermo, Messina, Agrigento and Ustica islands in the months from April to August. The colour is very varied and depends on the botanical species harvested, ranging from straw yellow to dark brown. The crystallisation is also very varied. The smell can be mild to more intense, while the flavour is generally mild but without a definite aftertaste. Good for sweetening herbal teas and hot drinks, also used for desserts. Like the whole range of honeys from Apicoltura Carlo Amodeo, in order for the Millefiori Honey to maintain all its properties for longer, it is extracted from the honeycombs taken from the flowering areas every 7 days to avoid oxidation at high temperatures, immediately centrifuged, decanted, potted and placed in a cold store at 4 degrees. Apicoltura Carlo Amodeo boasts a production of the finest and most typical Sicilian honeys that originates from the native Sicilian bee, the Black Bee (Apis mellifera siciliana), which has also become a Slow Food Presidium. Defined as black because of its dark colour, the Sicilian bee is distinguished by some important peculiarities such as productivity and earliness. Moreover, the Sicilian bee has a very low honey consumption and a strong capacity to develop from small nuclei.
