The White Condiment with Black Garlic Acetomodena is made with cooked must of white grapes, white wine vinegar and Voghiera DOP garlic. The characteristic of black garlic is that it has a less intense taste than white garlic. Since it does not exist in nature, this delicacy is obtained through a slow fermentation process in which fresh garlic bulbs are left for thirty days in a humid environment and then oxidized for another forty-five days. In this way, black and soft cloves are obtained which have twice the antioxidants of the classic fresh garlic, in short, a real panacea! The less pungent smell and the sweeter taste than the white one, with a particular aftertaste that tastes of licorice, make black garlic the ideal ingredient in the kitchen for sautéed vegetables, risottos, bruschetta and pasta sauces.
