Strozzapreti are a rough pasta obtained by bronze drawing and careful hand processing. Those from Antico Pastificio Morelli are distinguished by the presence of wheat germ, rich in vitamins and vegetable proteins. Strozzapreti al Germe di Grano are dried at low temperatures to preserve the flavour of the wheat.

The wheat germ is the heart of the wheat grain, rich in flavour and active nutrients. Normally the germ is removed to facilitate the preservation of flours, but, using artisanal techniques, the Morelli pasta factory reinserts the fresh wheat germ into the dough, obtaining a different kind of pasta, good even if dressed with just a drizzle of oil. During cooking, an intense aroma of wheat is released and the water is slightly tinged with green. It is recommended to season only with cheese and simple sauces to taste.
