Pappardelle is one of the most typical pastas of Tuscany. To appreciate it best, a good ragout of game is recommended. Typical of this tradition are, for example, Pappardelle alla lepre (Pappardelle with hare). Those from Antico Pastificio Morelli are distinguished by the presence of wheat germ, rich in vitamins and vegetable proteins. Pappardelle with wheat germ are dried at low temperatures to maintain the flavor of the wheat.

The wheat germ is the heart of the wheat grain, rich in flavor and active nutrients. Normally the germ is removed to facilitate the preservation of flours, but, Morelli’s pasta factory, using artisanal techniques, reinserts the fresh wheat germ into the dough, resulting in a different kind of pasta, good even when dressed with just a drizzle of oil. During cooking, an intense wheat aroma is released and the water is tinged slightly green. It is recommended to season only with cheese and simple sauces to taste.
