The Traditional Balsamic Vinegar of Reggio Emilia DOP Lobster label has been produced by Acetaia Malpighi since 1995, when the company inherited a small Acetaia in the province of Reggio Emilia. This authentic jewel of gastronomy carries with it centuries of culinary tradition and craftsmanship and enchants with its delicate fragrance and pronounced notes, lending a unique touch to every dish it adorns. It is obtained from the cooked grape must of fine Reggiane grapes and its excellence is guaranteed by the Consortium for the Protection of Traditional Balsamic Vinegar of Reggio Emilia, keeper of its authenticity and quality. Traditional Balsamic Vinegar of Reggio Emilia DOP Aragosta, with its density of 1.26 and its ageing for at least 12 years, is one of the three selections available, along with the Gold and Silver labels, each revealing an authentic sensory experience. Presented in an elegant 100 ml transparent glass ampoule, equipped with a practical dispenser, it embodies the excellence and delicacy of the territory from which it comes.
Culinary use:
Recommended for use as a raw condiment for Pinzimonio and marinades, or in the final phase of cooking to enhance risottos, meats and for the preparation of sauce bases for game, fish and poultry.
