Pastificio Morelli’s durum wheat Fregula is a traditional Sardinian pasta format made of very small, irregularly sized balls, slightly larger than cous cous. The one made by the Antico Pastificio Morelli is toasted, for an extra note of flavour. It is extremely versatile as its porosity allows it to be combined with full-bodied sauces and condiments, but it is also ideal cooked in broth as a soup or risotto.
