Step 1
Cook the udon noodles according to the package instructions. Drain and set aside.

In a bowl, mix together the oyster sauce, mirin, sake, dark soy sauce, chili oil, minced garlic, and grated ginger to make the marinade.
Step 3
On medium heat, stir fry the carrot and stalks of the broccolini first as these take longer to cook. This will take approximately 5 minutes.
Step 4
Once the carrot and broccolini are semi-soft, add in the onion, zucchini, broccolini tops, and capsicum.
Step 5
Add prawns and stir fry with veggies until they turn pink and are cooked through.
Step 6
Add the cooked udon noodles to the pan. Pour the marinade over the noodles and toss everything together until well combined and heated through.
Step 7
Top with sesame seeds and chili oil or chili flakes (as desired).
