Sweet Potatoes & Chickpeas with Tahini
Enjoy this Mediterranean flavour bomb. A perfect balance of sweet potatoes, crispy chickpeas, and a zesty tahini, garlic herb dressing!

Step 1
In a large bowl, toss the chickpeas with extra virgin olive oil, cumin, coriander, smoked paprika, salt, and lemon juice until well coated.
Step 2
Preheat your air fryer to 200 degrees celsius

Place the sweet potato in the air fryer basket and air fry for 40 minutes or until the sweet potatoes are tender.
Step 4
Add the chickpeas to the air fryer for 15 minutes (while the sweet potatoes are cooking) or until the chickpeas are crispy.
Prepare Garlic Herb Dressing

In a small bowl, whisk together lemon juice, minced garlic, tahini, chilli flakes (if using), and enough water to achieve a pourable consistency. Season the dressing with salt to taste.
Prepare Toppings

Roughly dice 1 cup of cherry tomatoes.

Mince 1 handful (½ cup) of fresh parsley.

Finely dice the red onion and soak in vinegar for 20 minutes.
Assemble

Once the sweet potatoes and chickpeas are cooked, transfer them to a serving dish. Drizzle the garlic herb dressing over the sweet potatoes and chickpeas. Sprinkle diced cherry tomatoes, minced fresh parsley, and finely diced red onion over the dish.
