Stroncatura, or struncatura in local dialect, is a typical Calabrian pasta. It was originally made using bran and left over flour from the milling process and today, while maintaining its rough and coarse appearance, similar to large fettuccine, the recipe has been improved and modified over the years. Its dark colour is now due to the use of whole-wheat flour and durum wheat, thanks to which it retains its typical roughness, perfect for retaining sauces. Calabrian stroncatura is generally seasoned with traditional country ingredients such as garlic, oil and Calabrian chilli pepper, dried tomatoes, sardines and toasted breadcrumbs. Mangiarrìa Passione Calabrese is a fledgling brand synonymous with food excellence typical of the Calabrian territory, such as the typical pastas of this region.
