Spinach Rice
Packed with vitamins and minerals, this spinach rice is the perfect way to sneak in some greens to your mid-week meals! It’s buttery and delicious!

Step 1
Rinse the rice thoroughly until the water runs clear. Soak it for 20 minutes in cold water ❄️.
Step 2
Boil some water in a large pot. Add the bay leaf , cloves , cardamom pods , and cinnamon stick . Bring to a boil, then add the drained rice. Cook until about 70% cooked, then drain and set aside.
Step 3
Heat a large pan with butter. Once hot, add cumin seeds and let them sizzle. Add chopped garlic and sauté for a few minutes.
Step 4
Now, stir in the pureed spinach . Cook for a few minutes until combined. Add lemon juice , salt , and the drained rice. Gently fold everything together.
Step 5
Top with a pat of butter (optional) and enjoy your delicious and healthy Spinach Rice !
