The Barbero soft nougat with Piedmont hazelnuts IGP is a unique and artisanal product, still worked according to the ancient recipe of Asti nougat which dates back to 1883. The difference with the crumbly nougat, also called “hard”, lies mainly in the production times cooking, which in the case of soft nougat is much shorter. In fact, by incorporating less air and remaining more humid, the final product is soft and malleable. What does not change regarding Barbero is the use of top quality raw materials such as egg white instead of edible gelatine and a very high percentage (51%) of PGI Piedmont hazelnuts, carefully chosen and selected to hand before being added to the dough.
