Linguine with Saffron from Antico Pastificio Morelli are characterized by the presence of wheat germ, rich in vitamins and vegetable proteins. Saffron’s typical golden color and refined flavor make it a unique dish, especially paired with vegetable-based sauces.

The wheat germ is the heart of the wheat grain, rich in flavor and active nutrients. Normally the germ is removed to facilitate the preservation of flours, but, Pastificio Morelli, using artisanal techniques, reinserts the fresh wheat germ into the dough, resulting in a different kind of pasta, good even when dressed with just a drizzle of oil. During cooking, an intense wheat aroma is released and the water is tinged slightly green. It is recommended to season only with cheese and simple sauces to taste.
