Thanks to their dense and juicy flesh, they are among the most popular table olives, and in their stone-free version they are also easier to taste or use for delicious and colourful aperitifs and appetisers. Due to the method by which they are processed, they are also called Castelvetrano Olives. Barbera’s pitted Nocellara del Belice Sicilian Sweet Green Olives are pickled, i.e. immersed in a solution of water and salt that keeps their taste and texture intact.
