Mushroom Soba Noodles
If you’ve been to Japan then you would be very familiar with a warming bowl of soba noodles. This is my take on the classic dish, ready in a matter of minutes it’s the perfect recipe for the cooler weather.

Step 1
In a large saucepan over heat, add the kombu and water to create the dashi. Bring to the boil and let simmer for 10 minutes.
Step 2
In a seperate bowl, mix some dashi into the miso paste to make a smooth mixture. Pour into the rest of the dashi on the stove and mix to combine.
Step 3
Add mushrooms, spring onions and ginger to the broth and let cook for 5-10 minutes.
Step 4
In a seperate saucepan, cook the soba noodles according to the instructions.
Step 5
Add bok choy to the broth with mushrooms and cook for a further minute.
Step 6
Add cooked soba noodles to your serving bowls and divide the broth amongst the two. Serve with Schichimi Togarashi seasoning.
