Gnocca di Gragnano IGP from Fabbrica della Pasta di Gragnano is a large short pasta perfect for stuffing. The shape, similar to conchiglioni, is reminiscent on the outside of classic potato gnocchi. Try it stuffed with sausage and potatoes for a full-bodied, flavorful pasta dish or with a simple ricotta and spinach filling like the one used for cannelloni. Gnocca di Gragnano IGP is made according to the dictates of Neapolitan tradition using only the best coarse-grained semolina from first extraction mixed with pure water from the Monti Lattari spring. Bronze wire-drawing and long, gentle drying at low temperature help create a unique, high-quality product.
