Step 1
Cook the risoni as per packet instructions. Once cooked, rinse under cold water to cool.
Step 2
In a large bowl mix together the cooled risoni, beans, pesto, lemon juice, rocket & a drizzle of olive oil.
Step 3
Slice the peaches & cook on high heat in a grill pan. Once golden, drizzle with honey to coat the peaches.
Step 4
Spread the risoni mixture over a serving plate & layer over the mozzarella, cherry tomatoes, peaches & onion.
Step 5
Drizzle with olive oil and a good sprinkle of flaky salt.
