Step 1
In a large bowl add yogurt, oil, garlic and spices and mix together. Add in the chicken at mix to cover the chicken in marinade. Let sit for 30 minutes.
Step 2
Heat a large saucepan over medium heat. Add in the chicken 2 pieces at a time. Cook for 5- 10 minutes on each side or until cooked through. Remove from heat and let sit for 5 minutes.
Step 3
In the same saucepan, add the capsicum and let cook until soft.
Step 4
Add the cous cous to a bowl and cover with boiling water. Cover the bowl and let sit for 5 minutes. Once the cous cous is cooked, fluff up with a fork and season with salt, pepper and a dash of olive oil. Add in the herbs and baby peas and mix.
Step 5
Assemble bowls with chicken, capsicum, cous cous and a side of yogurt and lemon.
