Urs ini’s Frantoiana sauce is based on the ancient recipe for Frantoiana (or Trappetara), a first course that was often eaten inside oil mills, to feed the workers at work, during the olive harvest period. The main ingredients are pitted nostrano olives and extra virgin olive oil, then poached red garlic, purple aubergines and nostrano red radicchio are added. Ursini has further embellished the recipe by adding sweet dried peppers, small capers and blue fish. Try it with short pasta shapes such as paccheri and penne.
