The Extra Virgin Olive Oil Brisighella DOP is produced by Palazzo di Varignana in very limited quantities. The olives are harvested while still green, which allows the olive oil to best express its characteristics. It is an intense fruity oil with a light green color, which is harvested by hand in early October. The processing of the olives in the mill takes place within 12 hours from harvesting.

Fragrance:
herbaceous fragrances of green apple, rhubarb leaf and tomato.
