The Gnocchetti Rigati Pasta di Gragnano IGP from Fabbrica della Pasta are a Southern version of the classic potato gnocchi, made however with durum wheat semolina. Thanks to their shape which retains the sauce inside, they are perfect with full-bodied sauces based on mushrooms, meat or bacon. However, they are also excellent for preparing the famous Gnocchi alla Sorrentina with tomato and mozzarella. The unique porosity and genuine flavor is also due to the traditional bronze drawing, associated with slow drying and low temperatures.
