Apicoltura Cazzola’s Dandelion Honey is produced in early spring and has a very intense flavour reminiscent of chamomile and essential oils. It goes well with mature and tasty cheeses such as Pecorino or Monteveronese DOP. It is a very difficult honey to produce because the right climatic conditions are not always right for harvesting. Often the difficulty depends on the condition of the bee families, still fatigued from the winter period and not yet sufficiently developed to be able to cope with the demanding honey harvest. All these variables have meant that the difficulties for production are such that it is a very rare type of honey.
